SafLager™ S-23 is a world-class German lager yeast strain specifically selected for producing authentic, fruit-forward lagers and Pilsners. This 11.5g sachet is ideal for 5-6 gallon batches. S-23 is known for its ability to ferment cleanly at cooler temperatures while developing a more expressive ester profile than other lager strains, making it the definitive choice for European-style lagers and Kellerbiers. It offers high flocculation and excellent sedimentation, resulting in brilliantly clear beer after the lagering period.
Brewery Tip: S-23 performs best at temperatures between 53°F and 59°F. For the cleanest profile, start fermentation at the lower end of the range. For a more ester-driven character, aim for 60°F. Rehydrating in sterile water at 75°F for 15 minutes ensures the highest viable cell count for a vigorous start. This strain settles firmly, making yeast harvesting and cleanup exceptionally easy.
