Drive consistent results with the Metro C537-MFS-U, a C5 3 Series moisture heated holding & proofing cabinet built for high-volume workflows. This 3/4-height, mobile unit combines Red Insulation Armour with an insulated cabinet and door to retain heat while protecting your operation.
Dial in product quality using a thermostat up to 200°F and moisture control to switch between proofing and hot holding. Universal wire slides on 3″ centers adjust on 1-1/2″ increments to fit (14) 18″ x 26″ sheet pans or (26) 12″ x 20″ x 2-1/2″ pans.
A removable bottom-mount control module streamlines upkeep and keeps controls accessible. Rugged aluminum construction and 5″ casters, two with brakes, move smoothly from prep to service lines.
